Originally from Colorado, Carlton Halaby brings a focused, ingredient-driven approach shaped by experience in both New York and Denver.
Most recently Executive Chef at Point Easy in Denver, he led all back-of-house operations, launched a dry-aging and fermentation program, and drove a notable increase in monthly revenue. He also maintained full kitchen operations independently during a transitional period.
Previously, as Executive Chef at Otway in Brooklyn, Halaby oversaw all kitchen production and operations, from sourcing and food safety to team leadership and guest experience, working closely with front-of-house to ensure a cohesive service.
He earlier served as a Tournant at Blanca, where he trained across all stations in an open-kitchen setting, contributing to menu development, sourcing, and fermentation work with a strong emphasis on seasonality.
Halaby began his career in Colorado, with roles at The Kitchen in Boulder and Central Bistro and Bar in Denver.
